For Chef Danilo Vermouff, cooking has always been about connection. Growing up, Sundays were spent at his grandmother’s house, where his mom, grandmother, and aunt would gather in the kitchen to cook together. Sometimes he helped. Other times he simply watched or played nearby. Either way, food was always tied to togetherness, laughter, and a sense of home. 

Those moments left a lasting impression. Over time, Chef Danilo began to associate food with comfort and happiness, and that feeling is what first drew him toward cooking. It is a foundation that continues to guide his approach in the kitchen today.

Chef Danilo is drawn to dishes that take time. When asked which dishes best represent his style, he points to roasted prime rib and braised osso buco. These are dishes that cannot be rushed and reward patience. 

“For me, good cooking isn’t rushed,” he says. “It’s about care, timing, and trusting the process.” 

Letting flavours develop slowly allows ingredients to shine in their own way. That philosophy defines his approach in the kitchen and results in dishes that feel thoughtful, comforting, and deeply satisfying.

Right now, Chef Danilo is inspired by rich, comforting flavours that are balanced with freshness. Well-marbled beef, slow-cooked meats, fresh herbs, and sauces built from quality stocks are at the heart of what excites him in the kitchen. 

To keep dishes feeling lively, he often finishes them with acidity or fresh herbs. That final touch brings balance and brightness, ensuring each plate feels complete without losing its comforting appeal. 

Why Simple Food Is Never Simple 

One of the most important lessons Chef Danilo has learned is that simple food, done well, is often the most challenging. It requires deep respect for ingredients and a strong understanding of technique. There is nowhere to hide when the dish is straightforward. 

This philosophy shapes how he cooks and how he works with his team. Consistency, patience, and attention to detail matter. Doing the small things right, every single time, is what creates food people remember.
