Dishin’ on Taste Chefs: Meet Chef Brandon Ashby of Table 10

Chef Brandon

At Table 10, Chef Brandon Ashby combines passion, creativity, and an appreciation for simplicity to deliver an extraordinary private dining experience. From his culinary roots in Hamilton to mastering the art of tasting menus, Chef Brandon’s journey is filled with inspiration, dedication, and a love for sharing food.

A Culinary Journey Rooted in Love

Chef Brandon grew up surrounded by the magic of homemade meals. His mother, who made everything from scratch, taught him not only how to cook but also the science behind food. Her influence encouraged him to attend culinary school and pursue his passion.

Another key figure in his journey is James Barber, The Peasant Chef, whose show inspired Brandon as a young chef. “It was joyful to watch him touch, smell, and explore ingredients,” Chef Brandon recalls. “James taught me that cooking is about joy and sharing love through food.”

The Art of Pan-French Cuisine

As a classically French-trained chef, Brandon’s foundation is built on the precision and techniques of French cuisine. However, his culinary style goes beyond tradition. He describes his approach as “Pan-French,” blending French methods with global influences. “Over time, my cooking has become more refined while keeping its worldly charm,” he explains.

This fusion of classic and contemporary shines through in the menus at Table 10, where every dish is crafted from scratch and sourced locally.

Table 10: A Private Dining Experience

Table 10 isn’t just a restaurant; it’s an intimate space for food lovers to gather. Co-founded with Jacqui Cronin, Table 10 offers a private dining room that specializes in monthly 4 to 8-course tasting menus with expertly paired wines and spirits.

With a capacity of just 10 guests, Table 10 is perfect for those seeking a truly personal and unique dining experience. Whether it’s a celebration or a casual gathering, Chef Brandon promises to make it unforgettable.

Cooking is Love

For Chef Brandon, food is a way to express emotions. “Cooking is the easiest way to say, ‘I love you,’” he shares, a sentiment he credits to his inspiration, James Barber. At Table 10, this philosophy is served with every meal.
