Growing up in Oakville, Chef Jayke didn’t initially plan to step into the culinary world—he wanted to be a paramedic! As a teenager, a “bird course” in food and nutrition led him to an unexpected turning point. While working as a dishwasher at a wing spot, his teacher recognized his talent and entered him into a Halton food competition. He remembers being mesmerized by a winning dish—chicken wrapped in bacon with a perfect sprig of thyme—and that moment sparked his love for food. “I never looked back,” Chef Jayke says.

Known for his bold and vibrant cooking, Chef Jayke combines Asian flavors like ginger, soy, and hoisin with elements of French and Italian cuisine. He loves exploring food chemistry, focusing on the entire journey from “catch to cut to craft.”
