Inspired by Friuli: Where Land and Sea Meet 

Much of Chef Sonam’s inspiration comes from his roots in Friuli, Italy, a region celebrated for its exceptional seafood and meats. Lately, he’s been especially drawn to seafood and braised meats, flavours that remind him of home and form the foundation of many of his dishes. For him, great cooking always begins with quality ingredients and a deep respect for their origins.

One of the most meaningful lessons Chef Sonam has learned over the years isn’t about technique—it’s about how you treat people. His philosophy is simple: karma matters. Treat everyone with kindness and respect, in and out of the kitchen, because what you put out into the world always comes back. It’s a mindset that shapes both his leadership and the care behind every plate.
